A pressure tank exists to keep your pump from starting every time someone opens a tap. A submersible motor draws several times its running current at startup, shedding that heat into the water moving past it. The sizing formula
Required drawdown (gal) = pump flow rate (GPM) × minimum run time (min)
Use 1 minute for motors under 2 HP. Use 2 minutes for 2 HP and above. Most installers use 1.5–2 minutes on higher-flow pumps regardless.
Then buy one catalog size larger than the minimum. Tank cost is trivial next to pump cost, and there is no penalty for oversizing beyond floor space.
How to find your pump's flow rate without a pump curve: Run an outdoor hose bib until the pump is definitely on, then time how long it takes to fill a 5-gallon bucket. Five gallons in 30 seconds = 10 GPM.
